Hello ,
 I was wondering, would I be better off replacing my old phone lines inside my house with cat 5e cable? Any help with this would be appreciated. Thank-you,jjfw831

Depends on the condition of the wires. The wires connected to the phones are not important in terms of the quality of the conversation you hear. As long as there are no loose connections, static on a particular phone or hums on he line from a ground, the wires should be fine. Where you need to run new cat 5 or better wires is to the router on your FIOS connection.

Copper is just copper wither its old quad (red/grn blk/yellow) to Cat5 (blue, org, grn, brn pairs). For phone as stated above it doesn't matter what you use. And the only reason to replace if you have a problem on the line. But You can switch out your phone lines with new Cat5 if you want the option on running multiple phone numbers to one jack. Or if you want to splice in a internet connection with the phone line. You only need 2 pairs to connect a computer Ethernet, but you cap it at 10/100 and cant get the gigabit 1000 speed. If you want to replace them all its up to you, for phone it doesn't matter but for digital signals it is better to upgrade.
